Coconut Crunch Granola [yields ~ 1 1/2 c]
1 tbsp peanut butter1/2 ripe banana1/2 – 1 tsp coconut or vanilla extract1 cup oats2 tbsp unsweetened dried shredded coconut
1. Pre-heat oven to 325F.2. Mash the banana super well until there are no chunks.3.Add the peanut butter. Melt the mixture. 35 second in the microwave works, but I usually do it for a minute or two on the stove top. Mix it very thoroughly.3.Pour over the oats, and add the extract and shredded coconut.4.Mix until oats are completely covered.5.Spread evenly on a parchment paper lined baking sheet.6.Bake until it starts to slightly brown, and stir about two-three times. For my oven it was 15 minutes, but I always need to bake longer than most recipes suggest, so I’d recommend 7-10 minutes. Make sure to keep an eye on it.7. Let it cool and get crunchy before storing in an air-tight container.
